Tasty Oatmeal Cookie Recipe

Jump to Recipe

Oatmeal raisin cookies have always been one of my favorites, even though I know that people are very divided in their opinions on this type of dessert. If they happen to be one of your favorites as well, this is a delicious cookie to enjoy. By properly preparing the oats and adding natural sugars, it is a treat that can be enjoyed without raising your blood sugar too much. There’s not nearly enough fat in this recipe, so make sure to add extra fat in when you eat it, either by buttering your cookies, or dipping it in cream.

These cookies freeze well, so feel free to make a batch or two and pull them out slowly on the days you need a treat!

Ingredients:

  • 2 cups of Properly Prepared Oats
  • 3 TBSP Softened Room Temperature Butter
  • 3/8 Cup of Date Sugar
  • ½ tsp of Cinnamon
  • Scant ½ tsp of Salt
  • ⅛ tsp Vanilla
  • 4 TBSP of Raisins, Cranberries or Currant Raisins in any combination
  • ½ cup Coconut Flakes

Directions:

7- 24 hrs in Advance:

Properly prepare your oats.

After 7 – 24 hrs:

Preheat oven to 350.

Drain the oats. I let them set for five minutes to drip dry in the strainer then squeezed the remaining liquid off to get them dry. This is a very important step, otherwise your cookies will not hold their shape.

To the dried oats, add in the softened butter, date sugar, cinnamon, salt, and vanilla to the oats. Mix gently but well.

Fold in the dried fruit and coconut flakes.

Line a cookie sheet with parchment paper.

Drop the cookies onto the cookie sheet, forming them as needed.

Bake in a 350 degree oven for 12-15 minutes.
